The E6600 is quite a lot cheaper and from what I've heard they clock quite well, so is there much point in getting the E6700 and paying the extra or should I just get the E6600 and clock it?

E6700 waste of money, just go for the E6600. Make sure you get a decent board though and some good memory.
 
Also, unless you "MUST HAVE CPU NOW" then I'd wait until the scheduled prices drops at the end of july.
