Have managed to get my 5850 stable at 1000/1200 with 1.3volts.

What would be an acceptable gaming temp at this OC?
 
That's what I ran my 5850 on with watercooling... 1.274v to be precise.

For air cooling I'd hope you stay around 80C max and watch the VRM temp in something like Everest/GPU-Z, that can go higher but ideally not MUCH higher.
 
Ok so i'm getting 70 degree peak in vantage usually hovering around high 60s and mid high 60s in game (CODMWF2) using GPUz to measure.

guess that's not too bad????

I'm only running my fan at 46% so the noise is very acceptable.
 
In Furmark Extreme Mode my 5850 burns up, I've seen it at 80*C after half an hour or running it. Not sure if I remember it correctly though. It does not reach 70*C when gaming and I have it @stock voltage 775/1125 (max without flashing). Should I try undervolting the card?
 
80C is fine especially with extreme mode in Furmark. As you said in games it won't reach anywhere near that. GPUs can take a lot more heat than CPUs. For example the gt200 series throttling temperature is 105C I think.
