itunes noob

Ok , Ive just got round to buying an ipod for my car (yeah , Im a bit behind the times:p).
Ive mastered the itunes basics i.e transfering to and from the ipod and Im preparing myself for the imminent purchase of an imac.

Im currently using xp pro on my laptop and have always used windows media player and when I installed itunes it automatically found all the songs in my library which was cool.
However , when I acquire new music (and Im probably doing this backwards too) I just open all the songs with itunes (select all , right click , open with) and this puts them in my itunes library most of the time...

Now I have a folder in My Music folder called itunes/itunes music folder and in it are only a few folders , the rest are all in my windows my music folder.

So firstly - Would it be easier and better to transfer all of my folders into C:\Documents and Settings\Chris\My Documents\My Music\iTunes\iTunes Music and then put all subsequently acquired music into there?
I ripped all my CD's to my laptop before I left England see , so everything Ive got is in there.

Secondly - Some of my music is labeled as "Unknown Artist" or "Track 1" etc.
How should I go about naming these files properly? Do I rename them all in itunes? Then will they all save to the itunes library data file?

If you import the music folder in iTunes it will create the folders for you.
For the unknown artist etc you can manually change it in iTunes. I'm not sure if iTunes can find the song data automatically although if you rip from a CD it will add the data for you.
