iTunes Quick question

Hi all,
Just a quick question, how do I clear my iTunes Music folder , but keep all the songs on my iPod? Because everytime I sync my iPod I loose all the songs that aren't in my music folder.

When your iPod is plugged in, the page comes up showing amount of music etc. on the ipod. On this page, select 'Manually manage music...'
