I built myself a new PC the other day, I have copied all my music from the old one to the new one

I need to install iTunes, how do I sort it so that my iPhone and iPod don't get wiped when I plug them in?

Not sure you can prevent it.

If you have transferred over all the same content then it's a non-issue

I have transferred all my music etc but I'm sure that when I have plugged my iPhone into another computer in the past it has got all upset because it is not the original computer it was synchronised with

When I plug my ipod in will it just sort itself out, with all my playlists etc?

If your new install of iTunes has all the music that your old version had it will simply erase your iPod and copy them all back. If you've got purchased music within iTunes you'll have to authenticate the iTune installation by putting in your iTunes store username and password.
