iTunes v10.7 with iOS 7 and the 5S?

Hi,

After Apple had its major re-design of iTunes, which i really didn't like, i went back to 10.7 and have stayed there ever since..

However I'm now upgrading my device to iOS7 and actually replacing my 5 with a 5S tomorrow.

Can i still use 10.7? or will i be forced to go on the latest V11 of iTunes to backup my 5 to restore to my 5S ?
 
I was using an older version of 11 and I was forced to update to the latest version of it so I could sync to my iPhone 5 on iOS7. Could be the same for 10.7 too.
 
it wouldn't let me. Told me to use my phone on this ver of itunes, i'd need to upgrade.

Currently in the process of backing up my 5, running it through a restore cos i just carrier unlocked it (in order to make it ready for selling)

I get my new 5S delivered tomorrow, and i'll restore from the backup, which will hopefully save me a bit of time on re-downloading all my apps and so on. I've already deleted all my music and pics from the phone, to keep the backup size to a minimum. i'm working off an SSD and only have a spare 30gb. My phone is a 64gb

I will say, and perhaps its just me, but isnt Apple getting more complicated with things? I had to figure out how to transfer purchases, authorize my computer, make sure i was on the right ver, before being able to switch.

I'm very computer literate. The majority of iPhone users probably are not.. Seems to me that Apple has room to simplify the entire process.
