Jailbreaking iOS - 101?

Is there a definitive list/guide/supported hardware for jailbreaking each iOS device available?

I am looking to conduct some testing on an iPhone and iPad and am attempting to determine the newest, yet fully JB'd models to purchase. These will have to be new devices (i.e. purchased from retailers).

Any recommendations would be much appreciated
