Jailbreaking my iPhone... Again

So, I've decided to take the plunge again, but last time it broke, with no signal for days even after restoring, so I'm taking as many precautions as I can. I've read up a lot on jailbreaking and kept abreast of all the developments. I'm on the legit £35 per month O2 contract. Just a few questions I'd like to ask:

1. Where can I find and make a copy of the backup files that iTunes makes of my iPhone? Is this possible to be restored later if it all goes wrong? Better still, is there any way I can make a full backup of my phone just incase, or is iTunes' backup feature good enough?

2. I'm running 1.1.3, currently just going to restore to 1.1.4 and jailbreak from there, is this advisable? Are there any good apps/features of the phone that don't work on 1.1.4 (or any other versions) when jailbroken? I know that there were issues with google maps and the iPhone's clock in SMS app when jailbreaking on 1.1.2 (as I did last time) have these been resolved?

3. Are there any annoyances I'm likely to encounter that will make me want to restore?

4. Is ZiPhone the best app to use on a Vista x64 system with my UK 8GB iPhone bought on release?

5. Does having a UK iPhone make the slightest bit of difference to anything I might encounter when jailbreaking?
