jelly not setting!

Hi

Need some help from you food experts:).

Have one of them sponge flan cases that you can fill with fruit or what not. Anyway I have filled mine with sliced kiwi and strawberry and then added almost set jelly over the top.

Problem is the jelly is not setting and is actually reversing causing the sponge to go all soggy.

Can anyone tell me what is causing this, I have a feeling it may be the fruit Im using?

I think it may be due to the acidity of the fruit or the extra liquid thats doing it.

Yeah I think its just the fruit Im using thats not helping. I did read something about kiwi fruit being one that can stop jelly from setting.

More vodka. The answer to every jelly question is always more vodka.

I don't have any vodka, not to keen on the stuff!:D

Aye, enzymes in kiwi fruit prevent gelatin from setting.

This. Pineapple and papaya also has the same effect. Strawberries are fine for jelly.

If you cook the kiwi first you denature the enzymes and the jelly will then set. Also, make the jelly up stronger (i.e. don't use as much water - subtract 10%).
