I first heard about it on Two Pints of Lager and a Packet of Crisps... Wikipedia pointed me to the fact it was originally form Happy Days.

I use it for ridiculous. I first heard it a few years back on a TV program about ridiculous things in TV programs (100 greatest something or other) and the Fonz jumping the shark was one of the clips.

It originates from Happy Days when the Fonz waterskied over a shark, thus selling-out the show's credibility.
