Junk mail notification on Galaxy Tab 2

I've got the stock Android email app working fine on my Galaxy Tab 2, but I foolishly sync'd the Junk Mail folder too, and now whenever new junk mail is received I get a notification. If the tablet has been off for a couple of days then there's a list of every junk mail it's received. Often, it seems to notify me of junk and not new mail delivered to the actual Inbox, or at least when it shows both new mail in Inbox & Junk and I tap for it to take me to the email app, it shows the Junk mail folder with the new junk and not the Inbox with the new mail I actually want to see.

Is there any way I can un-sync the Junk folder? I've searched high and low online and found lots of people with the same problem, but no solution :(

If I long press on the junk folder I can access sync options, but there isn't an option to stop syncing this folder.
 
I get sync options from the Menu, but none that can stop it syncing the Junk folder. I can change the regularity of the sync process, I just can't turn it off.
 
The sync options apply to the folder that you're in at the time, so if you set sync to none while accessing the menu from the junk folder, you should be good to go.
 
I don't get that option though under Sync. If I long press the Junk folder > Sync options, or go through the menu at the top into Exchange ActiveSync Options > Folder Sync Settings > Junk... I get options to change Peak Schedule, Off-peak schedule and Period to sync email. Under Period to Sync email I can choose 1 day, 3 days, 1 week, 1 month etc. but no option to turn it off or not to sync.
 
I thought it was the stock one? At least it was the one that came on the device out of the box and I've not installed any others. I'll have a proper look and find out version details etc.

As for signing in/out, not sure how I go about this?
