Hi all i have a i7-7700k running at 5GHz & running at 1.344v. Running a AIDA64 system stability test what's the main temperature should i be looking at the CPU says it's running at around 75c CPU Core 1 at 80-85c. Cores 2,3,4 are running the same as the CPU.
Should i just be monitoring the CPU not the Cores temperatures

Individual core temps will fluctuate, usually because the stock TIM paste is crap.
I'd certainly recommend delidding & replacing with something decent. Most people see a minimum 10c drop across the cores.

I did my 7700k 3 years ago, & its never had an issue. Temps are usually around 50-60c when gaming depending on room temps. I did see 75c once when running prime on a particularly hot day.

I wouldn’t recommend de-lidding unless you really know what you’re doing. As said above it can significantly improve temperatures but if you get it wrong you can easily brick your CPU.

In any case those temperatures look fine for 5GHz. Certainly nowhere near thermal throttling.

What Blue160 said.
75c when stress testing is not at all bad. What cooler are you using and what is your case fan setup? Both case airflow and cooler make a huge difference in cooling ability. ;)
