Im going to upgrade to;

Core2 e8500
DFI X48
4gb Dominator
4870's in crossfire

oviously going to abuse the e8500 and get some 4ghz+ going on, but reckon i should get a quad instead, this is purly for gaming :)

What's the question? I see no question marks. :)

Are you asking if you should get a quad core for gaming? If so the answer is that relatively few games utilise quad core yet, the number will grow but at present you'd almost certainly be better with a quick dual core system if just for gaming.

Sorry was in a rush what i meant is would a higher clocked dual core be faster than the lower clocked quad? say 4ghz vs 3.3?
 
Unless the game is specifically coded for quad cores (or you want to have a couple of programs running in the background assigned to the unused cores) then the dual core should be quicker. Also remember if comparing the E8500 (as a 45nm part) to a Q6600 (as a 65nm part) that the 45nm chip will be faster clock for clock.
