Im trying to sync songs to it, ive tried loads of times to drag and drop some mp3's onto it under the device tab in itunes, but all it does is take a long time and then it hasn't copied anything over ?

Open itunes
Plug ipod in
Ipod should appear in devices tab on left of screen
right click on ipod and click sync
Ipod should display "do not disconnect"
When the ipod returns to the normal menu, it is complete

Have a look along the top in iTunes.. it will show the remaining songs left to copy.

I'm guessing you got impatient.. oh, and don't use MP3 if you value you ears ;)

ok i got it sorted, i updated software on the ipod and it decided to work

only thing i'm annoyed by is that it sorts files by the names in the tags and not the filenames, and some are messed up, so some albums have 2 or 3 songs in it, and others are dotted about somewhere

whats an easy way to clean them all up ?

Get an ID3 renamer, run it, and it will automatically find the album name and artist for each file. Looks nicer in iTunes as well. :)
