Just some help with resoultions

Hi I have 3 monitors or should I say had, since the stand collapsed today and broke 2 of my screens! . How do you force games to run at 1920 by 1080again since the last time I started my games up I had 3 monitors and now I don't! And my PC still thinks I do have 3 monitors, in game all the menus are of screen so I cant do them in game. I've right clicked on desktop and set resolutions to 1920x1080 and also in the NVidia control panel I have also disabled NVidia surround but it hasn't worked any suggestions?

Windows 8.1 Pro 64 bit
Dual GTX 780 Ti (just encase its different process)

Thought its worth mentioning 12 games are on steam and one is on Uplay if you could help out for both
