I'm fairly sure the Lenovo Thinkpad X1 Extreme Gen 4 has two SODIMM slots and space for two SSD's.
My Thinkpad T480 also has two SODIMM slots (max 64gb) and can support two SSD's (but the second is a bit of a hack in the WWAN slot and has to be one of only a few types of SSD). I'm running 32gb RAM, a 1tb NVME and a 512gb NVME in mine. I doubt you would be interested in this laptop as it is from 2018, has an ultra low voltage CPU and is not that fast. But I'll throw it in there as an option as they are now very cheap used. A lot of them are being sold by businesses and lease companies which is why they are quite cheap now. Awful stock screens though.
Another option which is a bit of a middle ground between the X1 Extreme and my T480 is the Thinkpad T14 AMD Gen 1. This is actually a fairly quick laptop (fast CPU, but onboard GPU) and has only one SODIMM slot (1 stick of memory is soldered, one is in an SODIMM slot) but supports dual SSD's in the same hack the my T480 allows. But only the Gen 1 accepts it.
