The below is the spec I'm going for but I've been warned off the ASRock to go for a ASUS M5A99X Evo v2 990 version. However, I see that the Sabertooth is £21 discount this week. Am I better going for that as it looks and sounds like a very good choice for the price?

Yes, do not get the Asrock. The Sabertooth is one of the best boards, especially if you want high overclocks (4.8GHz+) and want Crossfire, otherwise the EVO R2.0 is fine.

But I would drop to an 8320 and spend the difference on a 7950 instead.
 
So you'd go for the 3.5Mhz AMD over the 4.0Mhz? Not much in it really but over eight cores would it make much difference in video rendering?

The 7950 is a nice gfx card and newer over the 7870 and there's a discount on the 7950 at the moment.

And there wouldn't be any bottleneck issues with the 8320?
 
You can just overclock the 8320, on the 970 board you should get 4.5-4.8GHz with a reasonably good cooler.

The 7950 is far superior to the 7870 - more future proof with 3GB VRAM too. It's well matched with an 8320. Bottlenecking is a messy subject, some games will a bit, most won't. If you're buying for mainly RTS games it's more of an issue.
 
its for my son who does video editing and video rendering mostly and some Call of Duty gaming.
 
The 8320 is very good for rendering. Call of Duty will be no problem at all, nor BF3/BF4, etc.

If you don't want to overclock (which I strongly suggest you do), the 8350 will be the better buy for rendering.
