if your willing to spend that much on cpu cooler you may-as-well go with a thermalright true or a titan fenrir (is on this week only about the same price as sunbeam and has better temps than sunbeam).. the true is the best imo.. and both coolers come in amd sockets!!
I'm yet to see convincing evidence that Phenom 2's benefit from ddr3. It appears they're just not quick enough for the bandwidth to matter. Perhaps there are benchmarks out there which I haven't seen.
I've just finished setting up my first ever amd system based around the 7750 phenom 1, and to be honest I'm pleased. installing linux on it is driving me up the wall, but at least I'm posting from the machine now. I'm therefore more confident in recommending amd systems than previously
Modular psu? It's pretty, but that's all. It means either higher price or lower quality, I'd stick with cabled systems. Cable management is hardly difficult in the fortress anyway.
Corsair psu's are almost universally loved around here. Bequiet are also very good, either of these are above ocz in quality. I think pc power and cooling are fantastic, but they aren't cheap.
75 quid is the region where power supplies start to be very solid, so almost anything in that region will do you well. including the one you've picked out, it just seems a shame to put part of the budget into removable cables which really don't matter very much.
