Tito Puente and Buena Vista Social Club have good cuban style stuff, but not sure what ya after. You probably want Brazillian stuff like Mas Que Nada or Sergio Mendes? Giles Peterson would be the man to ask

My Girlfriend is Spanish and I like some of her music -

"Bebe" being my favourite (Malo - great track). Seconded on Gotan project - really excellent stuff.
Perhaps a bit of Shakira? although you probably have heard her stuff before.
Manu Chao - some great stuff there too
