'Legacy' Style Games

Both involve writing on the board, though I guess you could write on a sticker and place it on the board. Pandemic adds stickers, but you can probably remove them once done.

If your question is can you replay it, it's very difficult. Pandemic for instance involves opening boxes, sticking rules into the rulebook, board and player cards. It would be a lot of hassle to get around this, especially with having to open stickers to know the new rules.

You probably could, but it would be a nightmare to try. As said already it's not just the board that gets altered.

You should view these games as consumables as opposed to a board game that you will be able to keep pulling out time after time. If you want to run a campaign again from scratch you're going to need to buy the game again realistically.
