Ive a friend coming for lunch next week. I am not sure what to cook I would like to do something that is different, looks impressive but relatively in expensive and quick to make. :cool:

Toasted half ciabattas opened up and drizzled with a little olive oil. Topped with rocket, sunblush tomatoes and shredded mozzarella. Someone posted these in the picture your dish thread a while back and they looked amazing. Since then I've made them myself and if anything they are even better than they look.

home made ravioli. just get good at pasta first. very easy when you know how. looks very appealing and tastes lovely.

Do you cut them or toast them first?

Coley, Pollock or Pouting. TBH I prefer them all to cod. I never understood the fuss for cod, it's a pretty bland white fish IMO. All 3 are much more sustainable at the mo too (altho line caught cod is fine. Just be prepared to pay through the nose for it).

Cut them and then toast them

They're amazing. All the flavours compliment each other really well.
