Lettuce be honest.

I liked Win 8 and did not have any problems with 10 or 11. I would like the option to remove/not install a few things.
I had to setup a Win 7 VM to do some compatibility testing a few weeks ago, I would not want to go back to it.

Unless you use search a lot, which is something 7 is a bit outdated at, once you've got 7 setup how you want it and working it tends to stay that way - it might be missing 1-2 modern enhancements but otherwise is still a very good OS.

8 had some decent improvements underneath and is consistently the fastest booting out of any of my Windows installs but UI level leaves a lot to be desired.

10/11 are just meh - UI is ugly and fragmented and update and maintenance tasks pants on head levels of stupid in implementation being disruptive for many users not to mention updates regularly messing around with your settings and adding in things no one wants.
