I have a copy of Win7 x64 Pro via my Uni's software distribution scheme (Basically a full legit copy that cost me nothing). This is installed on my main rig.

Can I also install this using bootcamp onto my macbook legally? I'm not sure whether a single product key can be used on two machines even though they both belong to me.

There are very few Microsoft licenses that allow installation on more than one machine.
The Windows 7 "3 pack" is just that - 3 licenses.
Office still allows an install on a desktop and a laptop.

I would be very surprised if your license allows multiple installations.

No, you've used the license for the main PC. Even if it's a full retail version you can only transfer the license by uninstalling/formatting one PC and then installing it on the next.
