My E2140 has been running at 2.8ghz stably for about two weeks, then I boot it up today and its gone back to default. If i try to up the fsb again and restart it just loops "no signal" on the monitor and constant staccato beeps.
Any help?

I've not cleared the CMOS yet, but thats obviously an option.

If its beeping then the mobo is speaking in mobo language lol, u need to find out what bios you have then go to the bios website and look up the beep codes.
The beeping thats coming from your mobo is uniuqe so try listening to it a few times and it will appear to be something like "beep beep beep" then look up the beep codes for your bios and it will tel you what 3 beeps is.
I had to do this when my ram failed :)

It is constant beeping btw.

And also, It works fine at stock, but as soon as i increase the fsb it just doesnt boot and does the constant staccato beeps ;(

E2140
OcUK Value IP35-S Intel P35 (Socket 775) PCI-Express DDR2 Motherboard
OCZ 2GB (2x1GB) PC2-6400C4 Dual Channel Platinum Revision 2 XTC Series DDR2
BFG Geforce 7900gs oc

Everything is new btw (rma'd my previous gfx card and got the 7900 :( )

Also this was very sudden, last night it was working fine at 2.8 and now i cant get it past stock. Any ideas?

Constant beep generally says the GFX is a tad buggered by the looks of it.

Edit: Could also be a PCI Card not seated properly. Do you have any installed?
