Locked out of PC for 30 days after installing new GPU/Motherboard - What to do?

Today I installed a new GPU and swapped my CPU over to a new motherboard. When I booted the PC up, I had to reset my windows PIN. I was unable to verify my account through the security details (email/number both inactive). I had to provide a new number and now I'm locked out of my PC for 30 days until the waiting period to change security details is over.

Is there anything I can do except a new install of Windows? I don't really want to lose whatever data I had.

Do you have a spare drive you could do a clean install on and then recover the data using the original as a 2nd drive?

I do not use a Microsoft account on my system.

For now I have resorted to a fresh install on a clean hard drive. Fortunately I can still access all of the data from my other windows install.

First time I’ve ever heard this. Only way is probably a format since you changed your security details.

Surely that can’t be right.

Something seems missing.. when the PIN fails, Windows should/will offer to log in with username / password still, or can select (sign-in options)

No ideal if this would work... unplug / disconnect from the internet, login as before.

When I tried logging in using my username/password, it prompted me to verify my account using an email or mobile phone number of which I have lost access to both (failure on my part). Because of this when I updated the mobile phone number on my account, it is preventing me from continuing with the PIN reset:

Whenever I login to outlook or other services, the "cancel" button is a "next" button and I can continue as normal. The other issue I'm facing is I am locked out of any purchased on the Microsoft store (e.g. I'm locked out of Minecraft):
