Long Trip next Weekend (Holywell > Devon), However Gonna Take Sights In! Advice?

Hi There,
Next week, going to be going from Holywell to Woolacombe in Devon. So, just looking at routes and going to split into two days travel stopping off at B&B on the way... so, question is... what would be some nice roads etc to hit or towns avoiding all motorways. I don't' really have any time limit as such... Just leaving first thing Thursday morning next week and intend on getting to Woolacombe by evening of Friday... meeting friends for a 40th weekend. ;)

Just working on AA Route Finder at moment and contemplating...

Day 1: Holywell > Langstone (near Newport) via Barmouth then via Brecan
Distance: 216.9 miles
Time: 5 hr 11 min

Day 2: Langstone (near Newport) > Woolacoombe via Cheddar then via Minehead
Distance: 186.4 miles
Time: 5 hr 34 min

So, can anyone recommend any places to detour to etc, any nice roads or scenery that I can take in on the way either to or coming back.

I've always got the return journey as well which is Monday and Tuesday coming back... so anything goes fellas...
