Looking at this picture, how many surround speakers could I use?

TBH look at your collection & what you want to buy/rent/stream in terms of soundtrack surround sound types, then make a decision. Given that streaming AFAIK is not HD either (I don't stream much so others may prove me wrong) 5.1 may well be all you need right now. Unless the USA starts to support this better in future media releases that is, Atmos may be useful to have in the future.
 
How does the bed fit under the eaves? i.e. headboard under there or whole bed sideways? What's the rest of the room dimensions and is there any other seating (if so then what and where) or do you plan to sit on the bed to watch?

Width of wall is 15ft

Bed is not going sideways. Will going the most obvious way for home cinema setup

You would be crazy not to put the wiring in when its like that. Get your ethernet and speaker wires put in for 9.1 even if you dont use them all.
 
The info supplied doesn't really answer all the questions posed, but based on what info there is and presuming (in the absence of a direct answer) that the bed will also be the main seating then the room is suitable for 5.1.2

The eaves wall isn't a good place for the rear speakers from 7.1, it would place them far too close to the listener's head(s) when reclined. So with the current plan to have this as a bedroom/cinema the 5.1 with the addition of a couple of ATMOS speakers in the flat ceiling is about as much as the space can sensibly support.

If the room use changes in the future and a sofa replaces the bed then maybe it could go 7.1.4 With that in mind you might want to pre-wire now and make sure that the plans reflect the accurate cable positions.

Thanks, yes your correct, the bed is the main seating area.... I have planned all the cables all ready and they have been pulled through the plasterboard... I have done a 5.1.2 setup like you said.

How can I get ceiling speakers to point directly below me with such a slanted roof? I cant seem to visualize them angling down with such a slant.

The simple answer is buy speakers with tiltable tweeters. However, there are practical cosiderations such as the angle of the roof, the location of your ears when listening, how much tilt is available, sizes and distances, and of course Dolby's recommendations about relative angles etc, so just jumping in with any old purchase won't cut it if you want the system to be effective.

There was me thinking that 5.1 is still very much the industry standard and that the film industry really still hasnt moved towards 7.1 in most instances. Looking at this dolby atmos they want to put as many speakers in a room as they can but are the channels still really discrete at source?

Personally I would say if you think you can fit 9.1 give it a try and test it. If you dont want to risk spending any money there are audio places will let you home demo for a week for free particularly if you make yourself know to them and demo some speakers at their shop before hand. Sevenoaks let me home demo a couple of subs before I bought one.
