Looking for advice on a new pc build

So its been around 5 years since i built my last pc and i'm now looking to do the upgrade dance again.

My current spec

i7-7700K CPU
geforce 1060 6gb
16gb ddr 4-3200 (1600mhz)
Z270X- gaming 7
corsair rm850 psu

Its a gaming pc i'm after, budget would be around the £600-£700 although i could push the budget a little higher if it was really worth it with the idea being i wont need to upgrade for another 4 or 5 years.

Any recommendations?

Couple of queries,

How big a deal is having ddr5 ram as opposed to ddr4?

How important is it to have a cpu and gpu that are a similar spec from a gaming performance perspective? Is it bad having a gpu that outperforms the cpu or vice versa?

Id probably get something like a Ryzen 4500 and mobo and reuse the RAM you have/ Pair it with a 6700XT and youre good to go and should be a decent upgrade.
