Looking for suggestion on app for mapping apps/websites & designing screen flows?

Hey guys, looking for some suggestions...

First up I'm a big fan of apps suck as balsamic mock-ups or simple diagrams, they are great tools for someone who designs apps/websites, however...

I am looking to map out some apps/websites and in all my years the best 2 ways I have found are printing out screens and sticking them to a wall, working with stakeholders by scribbling on them and annotating navigation with string and sticking paper arrows on the wall. Perhaps afterwards I digitise it by drawing it up in Visio and embedding the screens.

My challenge is on Mac, there must be some great apps to do this and other user experience type design, OcUk'ers what do you recommend?

For app mock ups, I use http://www.flinto.com. It works with a mockup on the web, and there's a flinto app which makes the mockup itself look and behave like a real app.
