Looking to extract 5.1 or better audio from HDMI

Looking for a budget method to extract 5.1 or better from HDMI, this is so i can feed the audio into a bunch of amps and pa speakers for outdoor use. The best option so far appears to be a blueray player with analogue RCA outputs, is or was there such a machine with HDMI inputs so it can function as a dolby preamp.

No HDMI but i could use a laptop directly to the projector & a separate optical out audio card (assuming windows will feed multi channel audio from something like netflix)

the advice was it will extract 5.1 from optical but not hdmi (2 channel stereo from hdmi only & sudo 5.1from other analogue outputs)
