Looking to overclock, need some help

Hi there just managed to install my new motherboard (gigabyte x38-ds4). Was wondering on some overclocking advice(all the tutorials ive read are on asus boards). Ive found the bios settings a bit confusing in the gigabyte bios. These are my current specs

My ram is 2x2gb gskill 1000mhz, yet it doesnt seem to be running at its speeds as per the manufacturer.
Also i know it a lot to ask, so if you could point me in the direction with some guides with gigabyte motherboards thatd be useful too

ok so this is what ive got so far:

Small fft gave temp readings of 58 degree c
I am a bit confused with the system memory multiplier which i assume is what changes the ratios between fsb:ram... if so my ratios seem a bit dodgy, any recommendations.
Also as i said my RAM is 1000mhz memory. as i see it in the bios the SPD it displays is 800...?
All input appreciated, as this is my first oc ever

Ok set the system memory multiplier to 2.0a which is an 1:1 temps running prime95 full stress test are 60 degrees tops. What do you think so far? (dont think coretemp reading is totally accurate)

My latest results are as follows...:

Think i should leave it there... RAM is running at its advertised speeds, cpu is running at 3.5ghz at the shown temps while running the large test in prime95

just fired up css, oc'd my graphics card aswell(msi 8800gts 320mb) lag and fps is good, but people seem to move a bit jumpy/choppy, could this mean i need to up the voltage going to my graphics card in bios options?
 

Went up 1.50625v is there a max vcore?, seems stable been running just under an hour, temps are at 65(only got artic cooling freezer, looking to get some more fans for back and front if i can fit).
