lower watt psu mabe better

Am looking to build a new pc later on this year and ive already pick some of the hardware am going to be running. ive got to the psu.
At the mo am running enermax galaxy 1000w and am thinking am not using all that power so might be worth going smaller.
this is what my new system will be done around
I7 930
Asus rampage III
two ocz vertex ssd
Western Digital VelociRaptor 600GB
two 5870 (poss add a 3rd later on)
corasir 1866 ram
3X26'' Eyefinity 1920/1200
water cooled cpu with custom loop

Is my psu being wasted or is it best to have more then i will ever use just in case.
If am best to look at a less powerfully psu which one fits the bill.
Two i was looking at are

Corsair HX 850W ATX
Enermax Revolution85+ 850w

Keep the enermax.

It will only draw the amount of watts that the components use.

Has it got enough pci-e connections?

Or you will get molex to pci-e adaptors in the graphics card boxes.

But I reckon you have a big enough psu, the 5870 cards are more power efficient than previous generations.
