M&S fresh baked cookies

As these are so good and I fancy putting on about 15 stone, I want to have a go at making replicas of these. Any budding bakers got a recipe that will make cookies as good or better than these bad boys.
 
Has anyone got tips for making soft cookies with a crispy edge 'Millies style'?

Whenever I make them they end up like normal crunchy cookies or if I try taking them out early they are undercooked or fall apart into a pile of doughy crumbs!

The same happens when I make flapjack, it always comes out rock hard instead of soft and gooey.
 
Great, I'll be trying these recipes :). I too like soft cookies rather than hard ones. The ones you can buy fresh from Tesco and Asda are sometimes quite nice.
 
Quick question: Is it plain or SR flour for these recipes?

Also can margarine be used in place of butter?
 
Thanks, i'll get some proper butter then. Margarine seems to taste ok in cakes, so thought I'd ask.

Can't seem to find out which flour is used for biscuits. Seems to be either, so I bought a bag of each. Also it never seems to say whether you use salted or unsalted butter, so bought slightly salted :D.

Can't wait to make these!

I need a bigger baking tray! Not tried them yet but they look and smell amazing.
 
Pretty much all of the M&S bakery stuff is really nice.

I struggle walking past one without going in and getting one of their Cherry and Almond tarts.
