Mac Documents - drive association

In order to give me some form of data security I want to do what I do on windows (sorry to speak blasphemy in here :p) and that is have my documents (folder) on a seperate drive/partition but still associated with the Documents 'folder' in Finder.

Is this possible, if so how?
