Is it fairly safe to be considering buying a macbook fairly soon? Are there updates to Penryn's expected at any point in the near future? I know there are many rumours about MBP updates but was just wondering the situation with Macbooks.

MBPs will be the first to get an update, any update to the MB right now would conflict with the MBP and potentially do some harm to sales.

I'm not saying it won't happen, I just don't think it will happen soon. :)

Another question, how does a 'refurbished' model from apple differ from a normal one, they are a nice bit cheaper especcially with a education discount, worth going for? Dont want to end up with something that isn't all new and shiny! :p

Definitely go for a refurb if you want to save money, there are always cosmetically mint and everything obviously works fine.

The only difference is that they come in a plain box, not the official Apple ones. Also it being a refurb you wont get as much when it comes to selling, if you ever do.

Yeah - apart from the box being brown... they are identical. They also qualify for the free years applecare and you can buy applecare for them. There are occasional stories of a lemon creeping through, and then others of specs above the standard.
