I'm a self employed Architectural 3D Visualiser, I use 3DS MAX and Vray plus photoshop and a few other graphic tools.

I have £2500 - £3000 to spend, I'm not sure if I should split that into one work machine and one machine for rendering or just one decent work station.

I mainly work on still images, I occasionally do animations so am I better off using EC2 for the odd animation and just spend my money on a decent work station that I can also render still images from also?

What's the best set up for me and what sort of hardware should I be looking at. I'm going to use a local shop for the build.

Thanks in advance.

So have you tried asking this "local shop" what they think and what parts they have instock?

No good suggesting parts available at OcUK when this other shop do not have the same items.

Yes the owner is a friend of mine, he says he will be able to get whatever parts I need and will do the build as a favor to me.

Get a Dell or HP Workstation. Most Renderers will be using Xeon processors and EEC RAM. TBH It'll probably better to start a thread in servers, not because it's a server but because more business oriented people will be around.
