Making a Curry...

Tonight I am making a Curry for a load of mates.

Usually I am quite good at cooking but have never cooked for this many people so am worried about messing up, also never cooked a curry!

Pun: Recipe for disaster!

This is the list of ingredients I have been given via email:

tub of natural yogurt and a
half a cucumber
1 bag of white, normal rice, probs 500gms.
3 tins of chopped tomatoes
3 onions
2 small chilli peppers (green)
3 Cloves of Garlic
Curry paste, 1 madras and 1 Bhuna
naan bread-not loads cus not everyone likes it.
Some chicken. -use ** own judgment

I dont think that is enough for 7 people, espescially 500g of rice! Can anybody rectify my friends numptiness on measures.

Also any tips, don't want it to be too watery so whats the best way to make sure it stays relatively thick?

crikey! we only use 55g of brown rice per person!

Tesla, your receipe seems fine for 7 people to me. Perhaps a couple more chillis, but other than that, i can't see a problem. Certainly seems like enough.
As for chicken, we tend to use a breast per person.

Bit of ginger
4 chillies
2 onions
2 tomatoes
Fresh coriander
4 tablespoons oil
1 tbs Ground Cumin
1 tbs dried coriander
1 tbs garam masala
2 tbs mixed masala

this was the last curry i made, and it made enough for 4 people.
 
Keep the yogurt as an add to taste otherwise it can make the curry too mild.

Ideally make it the day before as the flavour is much better 24 hours later.

Also cook the rice in small batches, with a little salt, oil, and add cumin , plus a very little turmeric.
 
There must be thousands of recipes online.

Funny thing, whenever I have eaten with Indian friends at a restaurant, they never eat rice with their curry, just naan or chapattis, which also double and cutlery.

125g for 2 people?! No way.

I find the little uncle bens portions of 65g are far too small. Make 100g for each person and if there's some left over IT'S ONLY RICE - i mean, it's not that expensive. Bin it, make fried rice the following day, better than looking stingy with the portions!

As for a recipe... I always use the jars of Uncle Bens!

Peppers and mushrooms are a great way to flesh out the meal a little but not everyone likes them. I was at a house party last week and the host mixed small cubes of fried potatoes in with the chicken. It was quite nice actually!
Another party I was at, the host put a small jar of mango (?, maybe not) chutney in with the two jars of curry sauce. It was also nice and no one complained.

As for mild vs hot curry... probably best to pick mild. Some people just don't like strong flavours.
 
Do the onions for a few minutes first....throw in the meat.....throw in some vegetables and anything else that's lying around, add some sauce, add some spices...and you're done.

Anything goes in curries....even shoes (though you don't eat them) :D
 
i tend to use about three quarters of a cup full of rice per person, but as the others have said its only rice and doesnt matter if you do too much.

if you want to make sure that the sauce is nice thick consistencey add a bit of coconut milk or some single cream that normally thickens it a bit.
