Was wondering if it was possible to go the similar route to the Win XP "Black Edition" etc and make a custom windows 7 install disk?

I have a laptop with all the usual bloat etc that's just recieved a clean re-install and is working a charm, is there a way to have windows install then run a few extra programs once complete to finish things off or would the quickest/easiest just be to image the disk and have done with it?

That's what I'd do, at least if you're looking for a quick and convenient way to be up and running again in the event of a mishap.

Legalities aside, I've never seen much point in these customised "everything including the kitchen sink" installation discs you find on dodgy torrent sites - the chances are that next time you get around to using it, many (probably most) of the integrated apps will have been superceded by newer releases, or will at least need patching or updating. If you want a new installation that's as "clean" as possible, you might as well start with a vanilla setup disc and then just install the latest versions of everything you need.

Would like to know this, as will be reinstalling parents computer and they get <1mb broadband.
Would love to put w7 onto my pen drive with all updates and a few bits of software so I don't have to download much if anything. Don't won't to remove any windows features.

Why not just download the setup files you need and put them in a separate folder on the USB drive? Installing them individually on the target PC won't take any more time (probably less in fact) than faffing around creating a custom setup disc.

If you want to install Win7 updates offline, take a look at Autopatcher or WSUS Offline Update.
