Making notes on a PC

When at work, I've always scribbled down notes on a notepad when in meetings and so forth. Coming back to them has always been a bit of a pain in the err, hairy part below your back, as my notes are sometimes illegible and often meaningless.

It's also much slower to write than it is to type.

Are there any applications that you can run in the background, do a quick tab, and make notes on a laptop, whilst easily organising them?

A kind of a work/brain assistant for your PC. I've been using Word for just typing notes and it's too restrictive.
 
I don't necessarily mean in meetings, I've probably started it off on the wrong foot here. It was just an example. I can take notes perfectly fine, I was just trying to set the scene. ;)

We also sit in meetings online where laptops are the norm, and it's not rude to sit there typing away.

I mean if you're sitting about, working, thinking things through, trying to build up some kind of thoughts in the background that you can work out later... I'm after an alternative to paper.

Which appears to be OneNote!
