You could image the existing install off to a third disk, create the RAID array and restore the image back to the array. To do this you will need to get the existing installation booting with the SATA controller in RAID mode which although not as bad as XP still takes a bit of fiddling. There should be guides out there if you have a quick google.
Cheers mate, in the end, as the system isnt working 100%, we left it alone and backed up the data to a DROBO unit. Simple but effective way of getting it done. Shame i had to drive 4 hours to london, 2 hour job, 4 hours back to do it lol..
