[Maccapacca]

Had a very nice dish whilst on holiday so cooked it at home.

Potatoes from the garden

Fried in olive oil

Drained on kitchen roll

Aubergines

Chopped 1cm length ways

Fried

Drained

Peppers in half

Fried and drained

Garlic

Chopped tomatoes and garlic

Lay it all in a casserole dish

Grate some cheese

Bake for 15 minutes

Couple of eggs

Plated

Every one enjoyed it, very nice combination of veg

How did it taste compared to the one on holiday?

Did you add seasoning at any point?

Tasted good although we had it as a side dish away and yes salt and pepper in the tomato garlic sauce.

Great with fish or pork for Rotty

I'm making this tonight for the misses, too bad I'll have to fry her egg for 5 hours until it is rock hard.
