... for eleven quid but realised after paying instead of receiving just the addon, Gog had provided me with the extended Game of the year edition since I already had the Witcher 3. What I would like to know is whether this will wipe my previous settings and character stats once I download? Will it also delete my previously saved games? Thanks.

Afaik on PC the GOTY edition is compatible with saves from nonGOTY edition. You can simply backup the saves then put them back into their folder after reinstall and they should work.

You'll be fine. If you want, copy and paste the witcher 3 folder in "my documents"
