Dug up an old recipe for chicken that I remember being delicious, but the marinade seems like it'd be lacking a bit of volume. Components so far:
1tbsp olive oil
4tbsp cider vinegar
1/2tsp cloves
1/2tsp allspice
1tsp cinnamon
1/4tsp cumin
Black pepper
Cayenne pepper
Pinch of oregano
As I said seems like it'd be missing a little volume - I may not have noted down to add a little water. What do you guys think?
For anyone interested, works best with on the bone chicken - marinate overnight, grill on low heat or barbecue to crisp up the skin nicely. Serve with peppers stuffed with savoury rice (I use chicken stock cubes, onions, peas, mushrooms, sweetcorn and little bits of pepper, though I may drop that last bit since it's going in a pepper this time) and roasted for ~15mins.
