Memory choice

Getting a few parts for an upgrade to a second gen Ryzen (2 2700x) and I am considering what to do about the ram. It's very expensive and will hopefully come down in price at some point, so I plan to start off with 8gb and then add more later. So should I get 1 8gb stick or 2 4gb sticks?

I'd always go for memory in pairs.

If you can stretch to it, get the Team Group 8Pack RAM 3200MHz C14, it's the Samsung B-Die and works great with Ryzen setups
