Memory timings?

Depends on the memory being used, the timings are usually stamped on the side of each module.

Majority of the memory Ocuk sells are 9-9-9-24, with a few models better or worse.
 
It seems looking at different kits for sale from 1600mhz to 2333 as the mhz go up the CAS Latency goes up? Is this correct?

Yeah that's correct. You could try lowering them but that could lead to instability and lockups and to be honest you would notice very little performance gain anyway.
