I currently have 2 x 512MB PC3200 Geil Golden Dragon RAM modules, and I have the following two options:

1) Buy 2 x 512MB PC3200 Geil Value Modules
2) Buy 2 x 1GB PC3200 Geil Value Modules and Sell the Dragons

Which is the better option?

I could not find any more Dragons, so I have been forced to by the Value ones instead...
 
1) You won't know till you try it as to whether it will work. Mixing ram always carries a risk.

2) Much safer option.

A. For those running on AMD 64-bit CPU's it has to be 2x1Gb DIMMS for the best performance possible. This has always been preferable, but the main reason for doing this is for two reasons.

Reason 1 :- Higher overclocks are possible as there is less strain on the Memory Controller.

Reason 2 :- A 1T Command Rate can be used, which is important when trying to keep timings tight and getting the best from your system. Command Rate is more important than CAS or any other timing.

If you run 4x512 DIMMS then depending on what core revision you have, the system will either run at 333Mhz 1T or 400Mhz 2T. Obviously this is different if running on an Intel system.

***Command Rate determines whether a chip select can be executed in a single clock or whether it needs two or more clocks. In DDR the CMD rate offers a bigger boost in performance than CAS latency, with 1T command being the best currently available.*** (Taken from the Memory FAQ Sticky )

The 2x512mb or 2x1gb kit?

The latter would be a good deal, especially as you can sell your current sticks.
