So I'm considering getting a Mesh network around my house, replacing my Sky Q Router's wireless. I assume I simply turn off Sky's wirless network, and then I can setup the new Mesh network with the same network name and password name, and voila?

I have a 10m gigabit cable from my study (tucked away in the house) to a switch in my lounge. I assume I can simply wire in the mesh hub into that switch, thus putting the main/primary mesh node in a better position?

Pretty much what you said in your first paragraph. Which system are you looking at?
Trenda Nova MW6 - Cheap and cheerful for three units.
Ubiquiti Amplifi HD - Don't need the glitsy display TBH, and it has no MU-MIMO, if that's important or not. Has the hub and two receivers for good coverage.
Zyxel Multi X - Seems to get good reviews. Just two units.
