Hi All
planning on switching from plusnet to community fibre 500mb. I would be using the provided router from community fibre and need a mesh WiFi system. which is cable of handling the upgraded speed. I currently have the TPLink Deco M4 which is not that great to be honest and that is with 3 units setup as AP 's across a double level victorian house.

Have looked at wifi 6 units below but I am sure there are many more anyone have any recommendations please

TPlink X60

Wi-Fi 6 won’t help, the issue will be the backhaul links, without improving those, you are wasting your money. Run cables to each node, magically things will be way better. Alternatively run a cable to the first floor landing and install a decent AP, again the results are likely to be transformative. If you aren’t sure, run a cable temporarily and see the difference.

I assume you mean running a cable directly between router and each node or can I use a gb ethernet Switch in between the nodes

You can use a switch, as long as the nodes connect by physical cables and everything along the path is capable of gigabit, you won’t have a bottleneck. For short term testing purposes a cable run between rooms may be messy, but will prove the point. At the moment your bottleneck is the nodes connection to each other, wiring - ideally - all of them will make a massive difference.
