Heres my problem -
I have the latest Word 2007 on my machine and when I save the file in Word 2003 compatability mode it still doesn't look like what I processed.

Unless somebody does have a proper solution - can I put 2 different versions of Word on 1 PC because it usually overwrites the existing one?

Yup, but I think it's wiser to uninstall Office 2007, install 2003, then install 2007 alongside.

I have both on my work laptop in case I have to send out Excel files in 2003 (which is a shame as Excel 2007 is incredible)

All newer versions of office creates a separate folder under Program Files\Microsoft Office like \Office11, \Office12 so it shouldn't be any problems having 2003 and 2007 installed at the same time.

As long as you dont want 2 copies of outlook then you will be fine.

Outlook cannot coexist with any previous/higher version.

All other office apps are fine as far as I know.
