Why can't I seem to find middle bacon any more?

I remember selling it on my Dad's butchers stall as a nipper. It was massively popular and I loved it. Beautiful salty taste and had more meat per rasher than back bacon.

I'd love to get some again.

We also sold misshapes. They were nice as well. Looked right mess in the packet, but when you turfed it out and fried it all up in the pan, it was the business.

I suppose it's all about appearance these days. Back bacon just looks good.

Can't say I've ever had middle bacon but having googled it I now want some.

Our local farm shop does some amazing bacon which tastes nice and salty with fat that turns into almost pork scratchings when grilled. Oh and it's half the price of supermarket trash.

Morrisons have it in , everytime I go there at the butchers counter

I prefer streaky bacon myself but this is certainly an improvement on back bacon :p

I've home cured pork shoulder before into bacon. Can't remember the proper name for it right now but it was pretty good. Though it looks quite lean when cut into bacon-sized bits there's a lot of intramuscular fat in pork shoulder.

I buy middle and absolutely dirt cheap "cooking bacon" from Tesco, the cooking bacon is most definitely just scraps that they can't use in the "proper" packs due to it being all kinds of weird shapes and sizes, and it is also all different types, smoked, unsmoked, etc etc. It is seasonal though, I've noticed they will have loads of pork on offer around the time they have the cooking bacon in stock, or "NEW!" as they call it. The middle bacon is there all year round if I recall correctly and is cheaper than any back bacon... not sure why you're having such trouble :p
